Spices are the aromatic elements of any cuisine. They are used for flavouring as well as preserving food. Cochin, known as commercial capital of Kerala, deals mainly in spices. It is famous for good quality pepper, cardamom, cinnamon, ginger, vanilla and nutmeg. In ancient times, Kerala was an important spice trading centre for the Greeks, Romans, Chinese and Arab traders.
Black pepper and cardamom of Wayanad  are considered best in the spice market of Kerala. Kerala grows around 70% of the total Indian production of pepper, out of which a major part is produced in Wayanad only. Wayanad also produces oregano, rosemary, thyme, basil, mint, bay leaf and sage in small quantities.
